Text
(1)Bulk foods shall be dispensed only from
product modules which are protected by close-fitting, individual covers. If any
product module is to be opened by customers, the cover shall be self-closing and
shall remain closed when not in use.
(2)Customer access to bulk foods in product modules shall be limited and
controlled to avoid the introduction of contaminants. All product modules shall
have an access height of thirty inches or more above the floor and a depth of
eighteen inches or less.
(3)Potentially hazardous foods shall not be made available for customer
self-service.
